The first batch of lemons has been harvested, and eaten. MMMMM! Of the 4 lemons we picked, 2 were made into these delicious lemon bars, and 2 were given to my friend's daughters, who ate them like they were oranges.


Amazing Lemon Bars
I have this recipe written on a recipe card, but don't know the original source...let me know if you recognize it!

Ingredients:
Crust:
1/2 c. butter, at room temperature
1/4 c. powdered sugar
1 c. flour
1/8 tsp. salt

Spray an 8x8 pan with cooking spray, or coat with butter. Cream the butter and sugar until light and fluffy. Add the flour and salt and beat until the dough just comes together. Press into the bottom of your greased pan using your fingers and bake for about 20 minutes at 350 degrees, or until lightly browned (mine usually were done by 15 minutes...). Remove from oven and place on a wire rack to cool while you make the filling.

Filling:
1 c. sugar
1/3 c. fresh lemon juice (about 2 large lemons, strain juice through strainer to remove pulp)
1 T. grated lemon zest (from 2 lemons)
2 large eggs
2 T. flour

Beat the sugar and eggs until smooth. Add the lemon juice and zest and stir to combine. Fold in the flour. Pour the filling over the shortbread crust and bake for about 20 minutes at 350 degrees, or until the filling is set. Remove from oven and place on a wire rack to cool.
Dust with powdered sugar while still warm.

  1. Thanks Kelly, this looks great. My hubby loves lemon bars but I hate all the "stuff" in the boxed ones. I can't wait to make this for him.
